Frugal sandwichs for 20 teenagers tomorrow - ideas?

I have been asked last minute to make lunch for 20 teenagers. I figure 30 sandwiches and a vegetable platter should do it. Is that enough? I have several cans of tuna so that will make perhaps 8 sandwiches. I also have a few vegetarians in the group. Chicken and cheese are expensive where I live. Any suggestions are greatly appreciated!

    OY! Make a sub on a (preferably day old) italian or french loaf, or just put out the bread and a platter of the ingredients and let them custom make theirs with:

    inexpensive cold cuts
    inexpensive american cheese
    pickles
    shredded lettuce
    sliced cucumbers or tomatoes or whatever is in season

    Get creative with inexpensive additions, ie hot peppers, mustard, mayo, italian salad dressing, ranch dressing. THink Subway ?!

    These are all great ideas. Regarding the PBJ - that would be awesome but it's a peanut free school. I wish I had a couple of packages of meatballs - the boys would love it. "Pretty cheap artizan", I might end up doing that. Then if there are any leftovers I can package them up. It's pretty difficult to keep sandwiches if they aren't eaten. Jane, what about hummus sandwiches with finely chopped artichoke? Does that sound edible?
